Eggplant/Brinjal Rice
Fry the following in 2 tablespoon ghee or oil – cloves, cinnamon, bay leaves, cardamom ginger paste, garlic paste, onions, tomatoes and eggplant/brinjal. Add one cup of rice, salt, turmeric, chillipowder, cilantro/coriander leaves, one cup of yoghurt and three cups of water. Cook till rice is soft.
