Lime Rice
Cook rice in a pressure cooker.Spread the cooked rice in a large bowl. Heat 3 ysp of oil in a small pan, add mustard seeds. When it pops, add 1/2 spoon gram dal, 1/2 spoon toordal, 1/2 tsp asafoetida and 2 whole red peppers and a pinch of turmeric powder. See to it that the dals are roasted until golden brown.Add this to rice. Squeeze out 2 small limes over the rice and mix well.


Gram dhal, split urad dhal etc., must be soaked in water for one minute before fried in oil. Otherwise the fried dhals turn hard when I eat.
