Tomato rice
Cook rice separately and spread it on a large plate to cool for 5 minutes. Cut 4 (small & sour) tomatoes and 1 medium onion into small pieces.
Pour 2 tsp of oil in a fry pan and add 3 cloves and 6 cashews. When they get roasted and begin to smell, add cut onions and tomatoes. Add 1/2 tsp salt, 3/4 tsp red chilli powder, a pinch of ground cinnamon and fry well.To this add 3 cups of cooked rice and mix well. Add a pinch of garam masala powder.


Very nice and simple to do. My mum in law and hubby simply enjoyed it.
A good source of viatmin C too.
I tried this recipe. I fried onion until the raw smell vanishes and then added tomato. When I added onion and tomato together, onion felt like raw while eating.
